I try to roast a few trays of veggies to have for lunches during the week. Broccoli, cauliflower, zucchini, peppers…toss with oil, salt, pepper and roast for 30-45 mins.

I’m really into making big dishes that will last us a few days! We love leftovers, and I hate having to cook every night.

Healthy, quick, delicious, and will last a couple meals for us! I love making soup lately- it’s getting chilly and I seem to always have a sore throat lately! 

So this isn’t really meal prep, but def saves times since it is more than one meal
