My Fiance really loved it. I had to cut the recipe down a lot though as the original portions are way too much for just two people lol. 🙂 Nice for a movie night!

Herring, olive,tomato and spices pasta with an oil based sauce! It’s easy to make and tastes really good! I have the written down recipe but can’t recall where I got it from.

I love this lasagna. http://thepioneerwoman.com/cooking/the_best_lasagn/ Made that last night. Making a chicken soup tomorrow to freeze. (I know…it’s July). Chicken broth, rotisserie chicken shredded, onion, garlic, carrots, mushrooms, zuchinni ,squash & seasoned with parsley, salt/pepper, tumeric, thyme. I just saute veggies in olive oil, add chicken & broth, then we add boiled egg noodles. We LOVE this soup.

 And as I typed that out I realized I forgot to buy celery. I like to squeeze in a as many veggies as I can.

 In the summer, I do a lot of grilling–burgers, chicken with some spices or marinade, bratwursts, etc. If it’s raining or I don’t feel like grilling, I make steak subs, pasta, or chicken in a skillet. I’ve been doing copycat Chipotle burrito bowls. They are delicious and I can make everything in under 30 minutes.

passthepeas :  me too! i think i always get in a rut this time of year because the fruit is so delicious and plentiful and it’s so hot. lately i’ve been making a ton of salads, with and without meat sides. 

last night’s salad was awesome: lettuce, sundried tomatoes, cherry tomatoes, red peppers, sunflower seeds, artichoke hearts, chickpeas, goat cheese, and steak! 

i’ve also been making a lot of dry rub jerk chicken drumsticks, they’re so easy to grab and they’re good cold too. 

burgers are easy so i’ve been doing those a lot with a side of coleslaw. dh LOVES burgers. i like to do 50/50 lamb/beef. 

kebabs!!! we have a grill and there’s nothing easier than kebabs. some weeks i make a huge amount of kebabs and use them for leftovers during the week. current favorites: 1. lamb & peppers 2. chicken & pinapple 3. pork & onions
