We’re leaving for vacation early tomorrow morning so we’re just having something quick since I’m running around packing.. pasta with pesto sauce 🙂

Tonight I made Jamie Oliver’s courgette carbonara. It’s delicious – and it has courgette in it so it’s healthy, right?

It’s also one of the easiest things in existance to make. If you don’t have a courgette, buy one and make this soon!

This is what we’re having tonight, if I get on the ball and fix it (I was too lazy last night). I make the casserole version. http://www.ibreatheimhungry.com/2012/04/cheesy-chorizo-stuffed-roasted-poblanos.html

My go-to lazy meal is fish & asparagus. Cook the fish in a pan with olive oil and cajun seasoning, takes about 5 minutes.. While that’s happening, throw some asparagus in a Pampered Chef microwave steamer for 2-3 minutes, sprinkle with lemon pepper seasoning.

I’m going to do roasted garlic mashed potaotes, and serve a homemade stroganoff over top of it (I don’t feel like pasta). Side will be broccoli.

This is one of my favorite slow cooker recipes, and what we’re having for dinner tonight. It won’t help you today, but if you have a crock pot it’s perfect for when you’re feeling lazy.

I am using left over rotessierie chicken to make chicken fried rice!!!! So excited about this! Looked up a healthy version will be my first time making this! Love working with left overs!

Japanese style curry rice <3 not really appropriate for summer but it’s a favorite of FI and I so we usually have it a couple times a month 🙂
