Really yummy nachos… semi-homemade chips (tortillas that I season and bake until crisp) with refried and black beans, cheese, homemade vegan queso, sour cream, olives and salsa. I love nacho night!

I just made some baked ham with broccoli and cheese and mashed potatoes… Kids wont probably eat it though but I wanted to cook something that will last for a couple of days that I didnt really have to watch much because I am ill right now.

I am not cooking tonight (husband works night shift) & didn’t get into bed today until late. So I am letting him sleep in & I am going to figure out something for myself to eat when the time comes. haha

@Sweet.Sugar.Rose:  haha Anytime! Seriously, you’ve got to try baking (or frying) your own tortilla chips. You’ll never go back to crummy store bought chips! (Actually, Darling Husband has made this a rule in our house.)

Spicy Beef Stir Fry!! I’ve been cooking so many stir fries lately. They are so easy and I can use whatever is in the fridge. I bought some spicy chili garlic sauce for a recipe and I’ve been making the stir fry sauce with it, and its to die for! tonight we’ll have red peppers, red onions, carrots, and water chestnuts with beef.
