Cuban sliders with left over smoked pulled pork my husband made over the weekend! I am also making two small lassagnas to freeze bc i am almost 39 weeks pregnant and preparing for babe.

You guys have inspired me, I’m going to make turkey taco lettuce wraps tonight.  We’re trying to keep it low-carb and Darling Husband loves/needs meat, so they should be perfect after our evening workout.  Store-bought pico de gallo is pricey but it’s so very good and I don’t have the time after work/groceries/exercise to chop up all those veggies myself.

Wow, seems like a lot of people are feeling tacos (myself included!).  We’re pretty low on groceries from the holiday weekend, but luckily I ALWAYS stock up on taco supplies….the fatty, delicious, kind. Tongue Out

@beachbride1216:  Yum, that sounds delish! 

@MissTatas:  I make that dish almost once a week!  Noodles, red/green/yellow peppers, onions and normally a sun-dried tomato alfredo sauce.  Soooo good!

We had spicy hot pork fillet (tenderloin?) stir fried rice. Marinated the pork in soy, lime, ginger, garlic, five spice and sesame oil then fried it up with loads of fresh veg. YUM.

We have never had this before but I am super excited to try it.

Ingredients

  • 1 lb ground beef
  • cooking spray
  • 2 1/2 cups milk
  • 1 1/2 cups hot water
  • 2 cups elbow macaroni
  • 1 tablespoon cornstarch
  • 1 tablespoon chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • pinch crushed red pepper flakes
  • 2 cups shredded cheddar cheese

Instructions

  1. Heat a large skillet over medium-high heat. Spray with cooking spray and add the ground beef. Brown until cooked through and no longer pink. Discard any fat. Add the pasta, milk, water and spices and stir to combine. Bring to a boil and turn the heat down to simmer. Cover and cook for 10-12 minutes, or until the pasta is al dente. Add the cheese and stir to combine. Serve immediately

I’m lazy, so I’m having the supermarket fry me a whole catfish. I’ll just eat that with rice and some fresh mango salsa.
