ela0919:  Just a note: when I make this for just my husband and I, I use 1lb ground chicken and that allows for me to have 3-4 meatballs (I really can’t eat more than 3 unless I’m super hungry) and gives him about 5-6 (he eats a lot LOL). So you can probably get around 10 meatballs per pound. When I make these for company, I figure everyone gets 4 meatballs since I usually make 2 sides. Just thought that’d help when trying to decide how many lbs to make depending on the group size.

Also, you can just double the amounts for the sauce to make enough for a larger group 🙂

I always like to try new recipes, so I don’t really have a go-to recipe, but in the summer I like to do pork tenderloin or flank steak on the grill, usually with an Asian-ish marinade. Serve it with a huge platter of grilled vegetables, rice or couscous, and a really nice salad. Or if you don’t feel like making a bunch of sides, just serve it with Ina Garten’s grilled panzanella. Pound cake with ice cream and berries for dessert or homemade ice cream sandwiches. I also think tacos done on the grill are great – I usually do chicken, skirt steak, and shrimp with a few different toppings. I usually will make a couple things, like mango salsa and guacamole, and then supplement with some store bought salsas. Serve them with some kind of corn and black bean salad and a fruit salad.

ela0919:  Lasagna, you can prepare it ahead of time then all you have to do it pop it in the ove. I always have Salad and bread with it. you can whip up a salad in 5 minute.  perfect so you can socialize with your guests

Pork Tenderloin with potato and veg in the slow coker before i go to work and it’s ready when i get home. Just have to set the table for company

I, too, do hella enchiladas. Then just serve up some guac and chips and you’re good to go.

Otherwise I might do chicken sausages on toasted rolls with peppers and onions, veggie pasta salad on the side.

Lasagna, homemade soup (most of the time tomato bisque), pulled pork or chicken sliders and mashed potatoes.

We tend to make heartier meals for company since most of our friends (and us) eat healthy most of the time and like to eat a good cheat meal when we’re all together. My go-to’s are:

Skillet lasagna with spicy italian sausage and a salad

Oven “fried” buffalo chicken wings with homemade bacon baked beans and salad

Tomatillo chicken enchiladas with avocado crema, queso fresco, and pickled red onion and cabbage with a side of refried jalapeno black beans. This takes forever since everything is homemade.

Homemade pulled pork nachos with homemade tortilla chips (you can also use bbq chicken). I usually make these for movie nights or game days. I just bake them on sheet pans.

Breakfast for dinner is always a hit or salmon on a cedar plank with lemon, pepper and a little chardonnay. Homemade mashed potatoes are my go to side and none of it takes very long to put together (especially when we’re all drinking wine in the kitchen).
