I would think any recipe that calls for ground beef.  Tacos or some kind of mexican casserole would be good

Shred it and turn it into sloppy joes, meatloaf, meat sauce for spaghetti… there are so many things you can make with ground beef once it’s out of burger form.

Some kind of stroganoff? Mix with mushroom soup and pour over egg noodles. Easy and cheap!

I shred it and turn it into quesadillas sometimes!

We’re having meatloaf tonight.  Though with the gorgeous weather we’re finally having, I’m reminded of a silly but fun recipe from when I was little and in camp:

Ground beef
Potato (cut into bite size pieces)
Carrots (cut into bite size pieces)
Tomato sauce
Salt, pepper, seasonings to taste

Put all ingredients into an aluminum foil pouch.  Wrap it up, toss over a campfire (or grill) to cook!  I know people have added corn, onions, mustard, whatever you want!  It’s a fun kid’s meal since they can assemble it themselves 🙂
