@MissZeppelin: I have never heard Christmas Canon before! How lovely!
I’m usually a proponent of ‘The Original Was Better’, but I have to say – the Hendrix version of ‘All Along the Watchtower’ is great. Also all the covers that the Baseballs do – they’re a German (I think) rockabilly group who do amazing covers of current hits in a rockabilly style. Their version of ‘Umbrella’ is GREAT.
The Amy Winehouse version of ‘Valerie’ is pretty good too, although I’m not sure I like it better than the original.
And I’m not sure if this counts (and is possibly heretical to say so), but I much prefer Clapton’s accoustic version of ‘Layla’ from his Unplugged album to the original.

@chronicwhimsy: I’ve never heard of the Baseballs, but I like rockabilly music. I’ll have to check them out. And I prefer the Unplugged version of Layla too. Partly because it reminds me of my childhood–it came out the year I was born and I heard it on the radio all the time when I was a kid.

a few of my favorites are:
It’s Time – Glee Cast ( I don’t watch Glee, too awkward for me, but this song is amazing) cover of Imagine Dragons
Glad You Came – We Came as Romans (PUNK/rock) cover of The Wanted.
Really there have been these albums to come out called “Punk Goes Pop” Volumes 1-5 right now I believe. They are awesome. Some of the songs are Screamo though 🙂

Oh one more. It’s not necessarily a cover though… but sorta? Everyone knows Christina Perri’s song “A thousand years” but in the last twilight movie… (i know, i know) there’s another version of that song, it’s Christina Perri and Steve Kazee. And Steve Kazee’s voice is incredible in that song, almost a cover because he sings some parts she sang in the first version. It’s called “a thousand years pt. 2 (feat. steve kazee) Seriously his voice… like buttah all over me when I hear it… amazing.
