I have chicken cubes marinating now in a spicy lime, cilantro yogurt sauce. I will make kebobs served with a papaya salsa.  A salad with mango and red onion and probably green beans.

I made chicken parisian, and red skin mashed potatoes. Was going to make an apple crisp too but I’m saving that one for tomorrow’s dessert!

Hubs isnt’ home, so I made myself a stirfry of chicken sausage, black beans, broccoli, and sweet potato. It was super delish!

I worked so hard and slaved over our Quarter Pounder with Cheese and Angus burgers.

It was back breaking work 😉

(TBH, I’m jealous of you who make dinner almost everynight. SO works odd shifts and I hate cooking a big meal just for myself, so we only eat good things if the two of us are home at the same time, which only happens like two times a week.)

Darling Husband cooked dinner…he had gotten some free frozen hamburgers at work, so he cooked those in some red wine and topped with mushrooms and cheese.  Yummy and simple!
Our main meal on Sundays is brunch…I made French toast with homemade blueberry syrup, and scrambled eggs.  I’m on the South Beach diet right now, and this recipe of theirs was fantastic!
