Hanging out with my sister and her husband this evening so we grilled some steaks, corn on the cob, and caprese salad. Yummy and actually pretty healthy!

Since I’m sick, I had chicken noodle soup, but I had made quesadilla “mix” for Darling Husband to cook up (I typically work a second job Monday nights and was preparing to go in tonight).  My quesdillas vary each time I make them…tonight, it was just fresh corn, cheese, and salsa.  He loved it!

I am making panini with fresh mozz, tomato, chive and greek oregano grilled on pread with a baby spinach salad.

Just cooking for 1 since Fiance is away.

I sliced up a chicken breast and pan grilled it.

Heated up some tasty bite veggies in curry sauce and made some whole wheat couscous.

It’s nice because it’s enough for 2 meals and I can eat it again on Wednesday night.

I made cajun shrimp, garlic mussels and stir fried broccoli. Trying to cook more so I can control the oil content

Baked some tofu with olive oil, salt and pepper, and did the same for some brussel sprouts.  Very good.

BBQ chicken and ribs leftover from when Darling Husband grilled yesterday.  I made a quick salad to go along with it.

I made a Romano’s Macaroni Grill boxed meal (they are next to the hamburger helpers in the store) the one I made was Creamy Basil and Parmesean Chicken. It was good and pretty easy. It only took about 20 minutes and all you have to add is milk,chicken and butter. Next time I will try one of the others to see if they are good too

Mmm….we had fried flounder, summer squash and jasmine rice! It was absolutely delicious! 🙂
