I’m bringing a green salad, because that’s what I was assigned. Apparently my MIL thinks I’m a terrible cook or a flake, or both.

I’m a little insulted.

Sorry I can’t be of any help! Haha.

You could do scrambled eggs (with ham/sausage/potatoes/etc.) in puff pastry shells for the breakfast. Just omit cheese.

Proscuitto wrapped asparagus.

Hummus and pita or vegetables.

Mixed wild mushrooms. Sauteed and simmered in red wine.

Roasted Brussels sprouts.

I made egg nog cookies and pumpkin cinnamon streusel coffee cake (but those both have dairy in them…)

DH is going to make the prime rib, so I’m doing the side dishes. I am a huge Pioneer Woman fan so I’m using her recipes.

Burgundy mushrooms are simmering on the stove as we speak — in an entire bottle of burgundy, two sticks of butter and a few other good things. They need nine full hours on the stove so I’m getting a head start today.

Tomorrow morning I will take a crack at potatoes au gratin and Brussells sprouts roasted with olive oil and drizzled with a balsamic glaze. It should be delish!
