First determine how long the really need the ribbon to be.

I suggest you use a different ribbon so you can keep the wedding sash wrinkle free.

Wrap it around their waist and tie the bow to get the look you want.

Measure the finished sash and cut your ribbon to that length.

You can finish the ends with FrayCheck (buy it at a sewing store) or carefully dab white glue on the cut ends with a Q tip. It will dry clear.

There is another method that involves holding the cut edge of the ribbon near the flame of a candle to just barely melt the edge without burning the ribbon. This method takes practice though so I wold use the scraps till I got the technique down perfect.

a tailor could probably shorten it inexpensively.  You could also look on pinterest for “ways to tie a sash”
