What do you bees make for lunch on non-work/school days, like Saturday? Do you go out, pick something up, eat leftovers, or cook something simple? I feel like we’re always in a rut for what to eat on days we’re not away for lunch. We’ll throw together a sandwich, heat a can of soup, or microwave some leftovers if we have it. I need some inspiration please!

We make a big breakfast around 10-11am everyday and then just have a snack later around mid-afternoon if we’re hungry again. We usually make pancakes or something similar but we actually just talked about getting a breakfast cookbook and trying something new together every Saturday.

I usually skip lunch on Saturday. I sleep in a bit, have coffee and usually make a breakfast sandwich which holds me over till dinner. Usually on Sunday we end up going out for lunch. Usually a place on the water, or now that’s it’s football season usually head to a sports bar for wings and beer. One thing that’s amazing to do at home is a smoked tuna dip on crackers with peppers on top…… I think the tuna is star kissed (in a packet, not a can) and it’s really awesome!!!!!!

I just made a quesadilla on the stove – two small flour tortillas brushed on the outside with veg oil, with goat cheese, roasted red pepper (from a jar, just sliced into small bits), frozen corn, and a tiny sprinkle of garlic powder. Sounds fancy but it’s super easy, you just flip it over when the first side is golden.

@Maggie Mae: Can you please share the smoked tuna dip? Looking for different things I can do with tuna.
On Saturdays, my schedule is so different that I never know if I will even eat lunch because usually if I eat breakfast it isn’t until about 10 if I am good. So I would then eat a super late lunch. And lately since we opened the restaurant up, I would go out there between 2-4 just to give my mom a small break if there is anything she wanted to go do. And sometimes I grab a bowl of rice while I am there.
But like today, I just had a steamed bun for lunch which is a leftover. So just depends on what and where I am if I eat lunch or not.

Yum, these ideas sound tasty! I’m glad I’m not alone in my lunch inconsistency. I’m hoping we can try and get more productive lunches going though to prevent so much snacking in the afternoon and early evening, and cut back on our food costs in picking up so many to go lunches.

I bought a container of hummus this week, and I’ve been spreading it on sandwich rounds with sliced tomatoes and alfalfa sprouts. It’s delicious and takes like a minute to put together.
