I have a pretty simple recipe for brittle and I wanted to do this for the favors for the wedding. I have made it with cashews, but for the weddding I was going to make it with all kinds of different ingredients.
Do you think it is feasible to make the brittle the weekend before the wedding, when there will be between 250-300 guests?

How long does it take you to make it? How many favors could you get out of each batch? I did homemade caramel with one of my BMs a few days before the wedding for 150 guests and it was fine. It took us about 6 or 7 hours. I think it actually took us longer to package it all up than to make it all! Make sure you do all your tags well in advance so all you need to do is slide the brittle in the bags, tie it and throw the tag on. So long as you schedule that day in and budget your time for it you’re fine.

I think you’d be fine! I thought about doing homemade caramels for favors (decided to go with something else due to cost) but I would have had plenty of time to get it done for about 150 people had I decided to stick with that idea.

@bakerella: It only takes about ten minutes per batch. I was actually thinking of making it into a brittle buffet, so that people could pick out which types of brittle that they would want to try. That way I could just have the bags sitting there with the ties.

Write out a plan for this and see if it’ll work.
materials. time. cost. # people it’ll take, resources, how early it’ll get made, obligations during that time. I think it’s do able but normally these things have to get done right before the wedding and most brides are frazelled at that point. If you have people to help and the space and money sounds good!

I think that you’ll be fine with your timeline, etc. I would only caution to make a nut-free batch for those with nut allergies. As someone with nut allergies, I would hate to go to a wedding and see that I can’t enjoy the favor because of this allergy.

@brox: I had thought about this and I think I am going to try and just do a plain brittle and one with cocoa nibs in it. I just want to make sure to have them done and put away before I start making the ones with the nuts.
My mom doesn’t think that I will have time to do it, but I’m pretty sure I can pull it off. Fiance said that he will help and we work pretty well in the kitchen together.
