Ours was pre-set and worked out fine. It not only sped things up but it gave people something to do while the misc dances were going on.

45 minutes is not a lot of time for a 3 course meal.

If you plan on pre-setting salads, just make sure they aren’t soggy and wilted by the time guests sit down. That’s the only way they’d miss your centrepieces, they’d be focused on the barely edible leaves on their plates instead.
