I kind of rotate a few different breakfasts, depending on my mood, how hungry I am (not really into eating first thing in the morning), how busy I am, etc. I am a stay at home mom now, so I have breakfast more often than not these days. When I was working I would usually just have black coffee and then have a big lunch.
I usually have a batch of hard boiled eggs in the fridge so maybe I will cook a sweet potato in the instant pot or sautee some kale and garlic with balasmic vinegar and eat that with my hard boiled egg. Maybe even just half an avocado.
Sometimes I will just have a bagel with cream cheese, or some yogurt and cottage cheese, or make some pancakes, oatmeal, or just have cold cereal with milk.
One of my favorites is a breakfast skillet with potatoes, eggs, and a bunch of veggies I have on hand all chopped up and cooked together.
This morning my daughter and I had frozen whole wheat waffles.
