(Closed) What goes well with pork?

@BeachBride2014:  You got it! That was the first thought that came to mind!

You could also do a cranberry sauce. Not the chunky kind, but a reduced, thick, slightly tart sauce that would go well with rosemary and the slight sweetness pork gets when cooked. Also a nice balance to the squash. 

You could also do a great salad with spinach, goat cheese, dried cranberries, sliced pears, and pecans or walnuts. Make a simple vinagrette, and done!

My mom makes pork chops frequently when I visit, and I enjoy them with a side of rice and soy sauce. But if you’re looking for something more elegant, wild rice would probably also be tasty. Or risotto with a cranberry reduction. You know, whatever.

@jjmomma:  I love potatoes. So, I shouldn’t state my opinion about if that is too many carbs/starches 🙂

I just realized all three of my ideas have something in common:  macaroni and cheese, au gratin potatoes, cheesy rice.   I like cheese.

I would take your acorn squash and cube it and roast it. set it aside

Sautee garlic, onion and olive oil. salt to taste, dash of nutmeg. Add cranberries till softened. Toss in spinach and wilt (dont cook!) then add the roasted acorn squash.  

I made a similar dish for Tday and it was great!

Maybe a cranberry sauce/chutney? I saw quite a few recipes for those around Thanksgiving. Also, mashed potatoes with pork is awesome. I like @ThreeMeers idea. Sounds yummy!

I love having a fruity sauce to go with pork. Nopa, this well known SF restaurant famous for porkchops usually pairs their porkchops with whatever fruit is in season. My favorite version from them was when they shaved kumquats over their pork. It was delicious!!

Cranberries sound divine! PM me if you want a great citrus cranberry sauce!
