i’ve made cheese twists before….pretty easy…

cut into long strips, twist them, brush butter over them and sprinkle liberally with parmesan cheese.

bake until they look crispy and delicious.

voila!

Ooh – Something a little different from the traditional pastries….we made some asparagus wrapped in phyllo dough, drizzled with olive oil and sprinkled with freshly grated parmesan cheese.  Throw it in the oven until crisp… YUM!

I’ve used it for baked brie, mini red pepper goat cheese squares, anything with mini sausages, pizzas, cheesey stuff, also desserts like berry dishes.  Check out pillsbury (I think) or the companys website for ideas!

I made for an appetizer the other weekend caramelized onions, mushrooms cooked in sherry and goat cheese.  Spread on the slightly rolled out sheet, roll up and bake. then slice and serve.  You could throw chicken… ph wait that was puff pasty.  You could do the same with phyllo and brush a bit of butter between layers. make about 5 layers before spreading mixture and rolling.

Love love love love love this baklava. It’s a never fail, always crowd pleaser. I’ve had people tell me it’s better than baklava they had in Greece!

I’m Greek so I grew up with a lot of phyllo in the house : )  It’s really delicate.. I think some of these things people have been suggesting they are thinking of puff pastry (that’s the one made my pillsbury).  My favorite things to make with phyllo is spanikopita… I could eat that all day everyday if it wouldn’t make me weigh a million pounds.

ETA – I saw some great recipes recently by Martha Stewart, I think she put some on top of her ramekins to make cream soups, pot pies, ect. (it might of been puff pastry though, not sure).

My caterer had a booth w/ samples set up at a bridal show this past weekend. He had the cups filled with chicken salad! They were sooo good.
