Darling Husband has to work tonight (he’s training for a new position at the TV station he works for), so I’m alone for dinner. I’m going to try a new recipe – Eggplant Parmesan Casserole. I know I’ll have a ton left over, but it will reheat well for lunches the next few days 🙂

Fiance is working until 10pm tonight and since is raining here i decided to make a home made soup. Usually in my family or country tradition when is a rainy day you make a home made soup or anything similar.

Crockpot ribs! With rice & green beans. Whenever it’s a rainy day, I love to use the crockpot 🙂

Apple butter pork ribs, garlic mashed potatoes, and sweet peas. Yummmm

Homemade chicken soft tacos with fresh pico de gallo and lots of veggies. It’s not raining here for once yay so I wanted something light and refreshing.

My daughter is at her grandmother’s for supper and I hate cooking for one… I’ve got my eye on a bag of potato chips.
I swear I have good healthy meals planned for the rest of the week :p

Grilled chicken ceasar salad. Super lazy because I didn’t make it to the grocery store today. That is my goal for tomorrow, today I cleaned the house.
