Well I had high hopes of making seared sea scallops with rice and a fresh veggie, but I never made it to the supermarket today.  Sooo…the plan changed to leftovers….until I realized my hubby already ate our leftovers for lunch!  Luckily, we had some shrimp in the freezer, so I whipped up a quick shrimp scampi.  so easy and so yummy!

My hubby’s going to make a meat sauce tomorrow, and I think I’ll marinate some chicken to grill on Tuesday.  possibly tacos on Wednesday…we’ll see how the week goes.  🙂

Raining here, too. And chilly, so I made sure to make something in the oven, since it’s warms up the house so nicely 🙂

We had sausage and spinach stuffed shells. With a salad topped with dates, pecans, and goat cheese crumbles.

I made homemade Vietnamese beef Pho, with the help of a packaged spice paste, and while I liked it, my SO did not. So sadly I won’t be making that again. I love pho, but this was my first time trying it at home, and I thought it turned out pretty good. 

Your meals all sound so much better then mine!

Last night (when this was posted) I made chicken parmigiana, four-cheese pasta, kale chips, and eggplant “fries” (oven-baked & coated in egg whites to make ’em crispy).

Tonight I’ll probably make homemade mac & cheese casserole with ham cut into it. Not sure what I’ll do for veggies. Probably either make another batch of kale chips or wilt it & some spinach into the casserole, and have some tomato, avocado & cucumer salad on the side.

tonight we are making Chinese Steak, one of our faves!

It’s stew meat marinated in soy sauce, then we add green peppers, ginger, diced tomatoes, and tomato sauce. Simmers for a while and serve over rice, delish!

It’s a gym night for me tonight and DH has the AGM for a board he sits on so I needed something quick and easy. Going to make an old standby: beef, broccoli and bell pepper stir-fry. I’ll prep the ingredients before I go to the gym and throw it all together when I get home.

Spaghetti Squash with Meat Sauce.  Not very exciting, but I love it!
