I always thought it was a chocolate cake that used beetroot extract (or something like that) for its colour

It’s basically a chocolate cake with a LOT of red food coloring added.

The reddish brown color was originally a reaction between the cocoa powder and buttermilk, but over time, red coloring was added to emphasize the red color.

Red Velvet Cake

This “Cake Boss” recipe is from a Food Network Challenge “Surprise Birthday Cakes” episode.

 

stick butter, room temperature, plus more for pans

cake flour

 salt

sugar

vanilla extract

large eggs, room temperature

unsweetened cocoa powder

buttermilk

vinegar

baking soda

red food coloring

****It’s simple isn’t it?

@vmec:  That is so true. I made a red velvet cake for Valentine’s and it was like I had Valentine’s Day themed poop for 2 days.

I hesitate to call it chocolate cake, based on the fact that it has SO LITTLE cocoa in it (about 1/4 of what you’d use for a real chocolate cake), but it is supposed to have a chocolate taste to it, yes.

It’s something that no two people can ever agree on what exactly it is or how to make it. Typically, it’s a chocolate cake base, although some places make with a white cake base and add a tiny bit of cocoa which is very rare. It is dyed with red food coloring to give it the deep red color, and filled and topped with cream cheese icing. It tastes like a devil’s food cake since that is the main ingredient. Beets are traditional for the coloring but hardly anyone uses them anymore, since they prefer food coloring instead.
