My mom is a cake baker, and she’s making our cake! We’re definitely having one layer of coconut cake with coconut icing, and one layer of chocolate pound with bailey’s filling, with chocolate icing. I still need to pick one more flavor!!

We have 4 tiers:

Bottom tier: yellow cake with strawberry filling

Second: spice cake with bavarian creme filling

third: lemon cake with fudge filling

top: red velvet cake with cream cheese filling.

I’m sooo excited for the deliciousness!

Sounds yummy! I am having cupcakes instead of an actual cake but the very top will be one hug cupcake and I want 5 flavors and cant think of good ones!

We had a 3 tier square cake as well.Top Tier: Carrot Cake with Vanilla Pastry Cream (carrot cake’s about the only kind my husband remotely likes)Middle Tier: Hazelnut Sponge Cake with Chocolate Mousse (I love hazelnut)Bottom Tier: Chocolate Cake with Cappuccino Mousse. (chocolate is my FIL’s favorite and a crowd favorite)All with a simple buttercream frosting.

ha! Good luck with that. Our caterers were on top of that for us but I never had time to touch it.  My bridal assistant actually put aside the top tier for us even though I had no intention of saving it. she packaged it and all but we forgot all about and and left it in the car overnight! 🙁 I was going to have it for breakfast the next day! I was sad.

We had 4 tiers – 2 flavors.

1. Chocolate Raspberry

2. Almond

No filling and buttercream icing.  We only had a bite of the chocolate raspberry and it was DELISH!  My mom is hoarding some major slices of the the almond which I’m taking home with me this weekend so we can have some!

We had 5 different cakes (all different size ranging from 8in-12in): 1 chocolate w/ cherries, 1 yellow w/ banana, 1 yellow w/ peach, 2 yellow w/ pineapple walnut.

We had 2 flavors: white chocolate cake with chocolate ganache filling, and chocolate sesame cake with vanilla bean marscapone filling. Unfortunately, we only got one bite at the reception and forgot to take any of the extra home! 🙁

We are doing what my fiance calls “The Lemon Explosion” cake: lemon layers, lemon filling, lemon buttercream.  The best part?  The lemon layers won’t be yellow–they’re white confetti cake (inspired by Pillsbury Funfetti).  No one will know until the cake is cut that it’s all business on the outside, fun times on the inside.  Shhh!  Don’t tell mom!

Some flavors we wanted that were vetoed by moms and “the elders”: amaretto blueberry, amaretto blueberry cheesecake, lemon blueberry, amaretto pecan praline, blueberry almond.  Apparently they don’t think anyone but the two of us would like those flavors.  They have a point.  But that WOULD mean more cake for us, the greedy cake fiends.

Sadly, I can’t do each tier a different flavor.  With 300+ guests (FI has a HUMONGOUS family), my mom’s biggest fear is running out of cake.  Why would we run out you ask?  Well here in South Louisiana we really really love our food.  Having more than one flavor encourages guests to sample each one.  I’ve been guilty of doing that on more than one occasion as a wedding guest!  My love affair with cake is so great that I will eat only a bit of the food (around here it’s typically appetizer-type buffet lines) so I have room for lots of cake LOL.

we’re doing a buffet and i’m making them myself. so far are flavors are: red velvet with cream cheese icing, strawberry with vanilla buttercream, chocolate doberge, mocha with coffee buttercream. the rest are still undecided.

@kitzy: yum, yum YUM!  Lovin’ all those flavors!  Homemade cakes are the best!
