I’m looking for some ideas for easy weekday dinners. Work has been busy for the past month and I’m having a hard time finding easy/delicious recipes I could throw together.
Right now I like making a big salad with the works (red peppers, shredded carrots, croutons, etc) and home made chicken salad (boiled chicken, mayo, splash of vinegar, Craisins and walnuts)
What is your go-to “easy” meal?

Chicken taco meat in the crock pot! Can throw in frozen chicken breast, taco seasoning, and salsa and be done. The best part is you can also be very versatile with it. Throw in whatever veggies/beans you want. Put it on low for 6-8 hours and it’s ready to shred when you come home!

stillnothing : Baked cream of mushroom with chicken, rice and green peas. You basically just toss everything in a baking dish and into the oven. So easy and a complete meal.

I made the Chinese Chicken Salad from Chrissy Tiegan’s cookbook called Cravings. I didn’t fry the wontons as per the recipe, instead I just crushed some instant noodles and sprinkeled those ontop. Its easy, pretty healthy and its delicious.

Baked salmon or baked chicken breast (marinated in italian or vinegrette) on bed of salad.

My favorite easy dinner is breakfast, lol. I love eating bacon and eggs, omelets, or pancakes for dinner. I rarely eat them for breakfast

– chicken soup (in a pressure cooker or instant pot– takes 30 minutes)
– we roast a chicken on the weekend so that we just need to re-heat it on a weeknight and make a salad
– we’ll make a huge pot of beef stew on the weekend, again to reheat.
– grilled salmon or steak with salad/sauteed veggies

– chicken quesadillas made with leftover meat, plus an avocado on the side and pico if we have it
– fish tacos (same sides)
– taco salad … I’m sensing a theme with what I consider easy
– rotisserie chicken from the grocery store, microwaved green beans or broccoli and mashed potatoes

I’m making mine tonight! I just brown ground bison or turkey and mix it with sautéed peppers, onions, mushrooms and seasoning. I just put it over rice or riced cauliflower. It’s tasty, healthy and quick!

pinkshoes : yes, I like to cook boned chicken thighs in Italian dressing, yum! Great idea to put it on a salad!
shadyladybug : that’s a great idea. Boyfriend or Best Friend loves breakfast, I’m sure he’d love that!
amanda1988 : reheating soup/stew is a great idea. Make a big batch durning the weekend and freeze it. Right now is the perfect time for it where I’m from too. Thanks!

I second breakfast for dinner!
Fully dressed baked potatoes and a salad.
Mini-pizza on a tortilla or naan.
