Oh I have lots!  Spring rolls, turkey burgers topped with goat cheese, lemon zest, mushrooms and onions (sounds weird, but very tasty!), fish tacos on corn tortillas, or salmon filet with sweet potatoes and asparagus… just a few.  My fiance is great in the kitchen and always comes up with tasty dishes, but those are some of my favorites.

Shrimp salad with lots of veggies.

Chicken salad with celery, cranberries, and pecans with greek yogurt instead of mayo, eaten with whole wheat crackers or multigrain bread.

Fish tacos with lots of lettuce, tomatoes, avocados, corn tortillas, and black beans.

Whole wheat penne pasta and a simple red sauce and meatless meatballs or turkey meatballs.

Veggie burgers and sweet potato “fries” (baked in the oven with a little olive oil)

I also have a great macaroni and cheese recipe that with pureed butternut squash instead of tons of cheese!

My favorite is a Chicken Enchilada Dish.

I don’t the cals, but it’s  a “low point” weight watcher dinner and tastes too cheese/creamy to be low fat. My Fiance LOVES it and didn’t realize it was healthy.

6 servings

Ingredients:

1c fat free sour cream

dash of black pepper

1/4c salsa

3/4 tsp ground coriander

1 medium onion (chopped)

6 medium flour tortillas

1/4 c all purpose flour

2 medium bell peppers (chopped)

2 boneless, skinless chicken breast (boiled & shredded)

1 c low-fat shredded cheddar cheese

cooking spray

2 1/2 c reduced fat chicken broth

Directions

Preheat oven to 350

Sautee onion & bell pepper w/ cooking spray in a sauce pan

Whisk together flower, coriander and black pepper in a medium bowl, gradually add chicken broth until whisked mixture is well blended.

Add flour mixture to saucepan and boil. Cook for 3 min or until think stirring frequently.

Remove from  heat and add cheese and sour cream.

Combine 1 cup cheese mixture with chicken and salsa in a bowl.

Place 1/2 cup chicken mixture on each tortilla and roll up.

Place tortillas seam side down in a 13×9 baking dish coated with cooking spray

Pour remaining cheese/sour cream mixture over tortillas.

Bake for 20 min or until bubbly.

Soup! 😉 I LOVE soup.  I make a kick ass vegetarian white bean soup….but then I eat it with like half a loaf of french bread….so, I think they cancel each other out.

I make an easy baked chicken breast – spin on chicken nachos …

2 boneless skinless chicken breasts1/2 can of black beansjar of favorite salsasmall can of chopped green chiles1/4 cup monterry jack cheesecumin & chile powder

Put chicken in a baking dish, season with salt & pepper and pinch of both chile powder & cumin. Pour over/around the chicken 1/2 can of drained & rinsed black beans, 1/2 jar of your favorite salsa and a small can of drained, chopped green chiles. Bake for about 25-30 minutes in a 425 degree oven.

Sprinkle over cheese & return to oven until cheese has melted. Serve with a dollop of low-fat sour cream and eat with corn tortillas or tortilla chips to scoop up the beans & salsa!

(i also add loads of hot sauce to mine…)
