New things I’ve recently made that my husband liked:

Buffalo shredded chicken in spaghetti squash boats

Baked chicken breasts with pesto, artichokes, veggies and cheese on top

Homemade pizza with greek yogurt crust

Basically, things I find on Pinterest.

I have a thing we call “magic sauce” haha which is essentially soy sauce, honey, red wine vinegar, chili powder, garlic. It’s great with flank steak.

Tacos are always a good favorite, can be altered to make enchiladas, burritos, taco salad, etc.

Stuffed peppers. With quinoa, rice, couscous, or black beans as a base with veggies, cheese, and other things. Can do all sorts of variants with this as well.

My husband is definitely a meat and potatoes guy. His favorite things I make are chili, cheesy meatballs, meatloaf, pulled bbq pork in the crockpot, a ground turkey and cauliflower and potato curry, sloppy joes on texas toast.

My husband’s favorite meal is salmon baked in coconut oil, with green onion and lemon juice on top…seasoned with good old fashioned salt and pepper.

He really likes spicy tomato lentil soup, honey glazed salmon, and one-pan chicken roast with brussel sprouts, squash, apples, and bacon.

FI’s current fave is gnocchi with homemade pesto, cherry tomatoes (cut in half), and crispy seitan mixed in. It’s great because it takes like 15 min to make. It’s a veg adaptation of something my mom used to make with chicken or sausage.

Seriously, he insists we make it once a week right now! I’m not opposed because it’s delicious, easy, and he often makes it for us on his own.

Vegan pesto pasta. It’s only vegan because I don’t like cheese but you could easily put cheese in the sauce. I make my own pesto from toasted pine nuts, fresh basil and roasted garlic and Lemon. Boil pasta, add grilled chicken (sometimes roasted broccoli) and voila.

He’s a big fan of my pumpkin turkey chili, and also shrimp and scallop pasta with balsamic tomatoes and spinach mixed in.

Salmon – we bake it first then broil it the last 5-7 minutes so it browns.  He likes it with a sweet teriyaki marinade and wassabi.
