I only have 1 vegetarian friend (at least that I know of), so I let her pick the entree. There were three choices, but she was very excited about the portobello lasagna, so that’s what we are going with. I’m sorry I don’t remember what the other options were.

We’re serving our food family style, with lots of grains, starches and veggies for the vegans and vegetarians to make a meal from (on separate platters, of course. My sister won’t eat food that was once on the same plate as meat.)
But I do feel bad about vegetarians and their limited protein sources. Mushrooms and pasta are tasty, but they are not the basis for a balanced meal. Depending on the general flavor of the menu, you could do a great lentil curry, lentil salad, lentil and rice pilaf or etc. At least that way your guests will get some protein and fillingness. If you’re going to take a vegetarian menu seriously, then I think there need to be legumes and/or tofu. (And pad thai with tofu is delicious!–and I’m a passionate carnivore.)

We’re doing Lo Mein with grilled vegetables (we have an asian theme). But I seriously don’t think there are any vegetarians at our wedding…

We actually are big meat eaters… we are having a steak, chicken and a fish option. There are only 2 vegeterians invited (who may not even make it) so we will enclose a personal note to them letting them know we can get a personal entree for them.

We had the same choice as Miss Taffy–a wild mushroom sacchetti (like a little pasta purse) in a garlic cream sauce. It was so yummy, my husband and I both had it for dinner. And we’re not even vegetarians!!

Thanks for your suggestions, everyone. Your choices all sound delicious. I need to wait and see if the vegan invitee responds with a yes… if not, then that opens up the possibilities quite a bit!

Right now, we have a veggie and cheese empanada and veggie paella. Also, we are doing some pasta with eggplant. My fiance is a vegetarian and we know a ton of them, so we wanted to have some options.

sigh, my coordinator won’t tell me. I’ve asked over and over again and finally just had to put “Vegetarian” on the invitations. Hope it’s one of the above because they all sound yummy.

I’m thinking about doing quinoa stuffed peppers so vegetarians can get their protein too.
