We’re having a Ukrainian buffet–so perogies, cabbage rolls, Ukrainian sausage, and then we get to select 2 meats (from the standards; i.e. ham, roast beef, chicken, turkey, etc.) and any 2 salads. (We also get rolls, fruit, dessert, etc.)
Can you help me brainstorm what types of meats and salads would go well with this? I’m going to speak with the caterer tomorrow, but I would love some input before then. Thanks!
OH, and if you can suggest easy, affordable, healthy appetizers/midnight lunch items (we will probably DIY this portion), that would also be appreciated!

IMO you can’t go wrong with chicken and beef. As for salads, caesar and house with ranch dressing. With those choices, everyone is guaranteed to find something they like to eat.
I’ve heard the midnight pizza is quite popular, but it’s not exactly healthy. 🙂 I think an appetizer buffet would be pretty cool, with meatballs and fruit trays and popcorn… all that random stuff people like to munch on at midnight!

are you asking for Ukranian salads or just basic, green salads?
I would probably go with some sort of green, leafy salad and then a mediterrenean style, cucumber and tomato salad.

I agree that chicken (or turkey?) and beef would be the best choices.
Yeah, the salads should definitely be green, because aside from the veggies and dip we’re supplying for the cocktail hour, the menu is pretty heavy on the starches, haha. Love the cucumber and tomato idea, especially for summer. I think these are simple ideas that will go over well. Thanks!
