(Closed) What meals should I cook this week?

Ack, I hate coming up with meals for the week! lol 

Try …. stir fry, homemade mac and cheese, homemade pizza, fajitas, chicken pasta (rotini pasta with chunks of chicken and veggies and italian dressing), baked chicken breast, or even breakfast. Eggs, toast, and bacon or pancakes are always good to fall back on when you have no other options.

I like to do a whole chicken on Sunday, then use the leftovers for chicken salad or chicken soup, sometimes I even throw it in with mac and cheese. Then I’ll cook a bunch of ground beef with spanish seasonings and make tacos or burritos or empanadas and spanish rice. Or you could do spaghetti, lasagna, or a meatloaf. I like allrecipes.com for recipe suggestions. I love that you can read reviews and suggestions from people who have cooked the recipe.

Okay… I’m hungry… What sounds good to me:

stuffed green peppers
homemade lasagna or spaghetti (slowly simmer the sauce all day if you can; so good)
chicken parm
(mini) pita pizzas
cobb salad
stuffed cheddar burgers (put the cheese in the burger so when you bite into it, the cheese comes out..) with avocado and sweet potato fries
homemade french onion soup
pasta salad

I am planning so far: a big shepherd’s pie (=lots of leftovers) and greek yogurt marinated chicken with rice and veggies, pork chops with sweet potatoes , apples and onions, not sure what else yet…

We are having:

chicken tacos tonight ( chicken is currently in the crock pot with broth, taco seasoning and a can of Rotel) 

Spaghetti tomorrow night ( and prob Tues for me since Darling Husband has a meeting and will eat on the go)

Wed I picked up some salad stuff so we will do salad and veggie soup ( I adopted DHs granny’s recipe for this. It’s just 2cans diced tomatoes, 2c Veg All, a diced onion, 1 lb ground beef,  garlic salt,  beef broth , cajun seasoning and an extra potato in the crock pot all day and viola)

Thurs will be leftovers– prob veggie stew, yay. 

Friday is our O’ Charley’s night– we typically call it in, pick it up and eat at home. 


Clearly we have an exciting week planned… Not!

Risotto, its my favourite, and the only dish I seem to cook thats edible… and I have just finished eating it, yum! haha. We also have chilli wraps, fajitas and curry alot.

We’re doing….

Monday: Pulled chicken enchiladas with fresh greens

Tuesday:BBQ pork spare ribs with sweet potato fries

Wednesday:Chicken pot pie with crumble topping

Thursday:Mix and match left overs

Friday: Slow cooked chili to make frito pie! Left overs for lunch the next day

Saturday: No idea, maybe go out?
