I was gonna make chicken parmigianna, roasted potatoes, and green beans. But I just saw the potatoes are moldy (soangry), and DH and I are paranoid. Still making the chicken, but what should the starch be?
I have brown rice, black eyed peas, blueberry muffin mix, tortillas, bread, cheese….I could make the rice, but it seems boring…

I would cook the rice or if you have pasta you could cook that too

I would suggest either pasta or risotto.

I do have pasta…do you just put the chicken on top of spaghetti? Or buttered noodles? Or is the pasta a side?

Italian here too, and I would go with pasta as well ~ even something simple, pasta can be very easy.

Ive only ever had chicken parm with pasta. It just doesn’t seem right with anything else!

I put the chicken parm on top of the pasta. I cut up the chicken and mix it together. Sometimes I make a little extra sauce on the stove to add to pasta.

Just put the chicken on top of the pasta and add a bit of red sauce. Sounds yummy!
You could also make chicken parm sandwhiches.

Chicken parm subs are amazinggg. I love them with toasted ciabatta bread.
