Buffet would be much easier since they aren’t plating. You don’t want someone that is hired to dish it out running out before everyone is served.

I would be wary of hiring college students. You have no idea how reliable or professional they will be. If the caterer just drops it off and leaves and your venue doesn’t have equipment to keep the food warm, there’d be way too high of a liklihood that it will not be the correct temperature when served.

I’d say your options are A) find a different caterer that will do the whole shebang, keep the food warm and serve it plated, or B) use the caterer you like and have them do a buffet.

I intend to have a buffet at my wedding. I’ve been to several wedding with buffets and I actually like it better. In my experience the food is more likely to be the correct temperature and guests can take as much or as little as they want.
