So we’re having BBQ at our wedding, and I talked to our caterer about putting together a baked potato bar. I fiugred people could have their pulled pork/chicken on a bun or over a potato. Our caterer has never done one before, so that means I’m sorta putting things togther for them. The only things I can think of to add are sour cream and chives, broccoli, cheese (shredded or maybe the nacho cheese sauce?), maybe turkey (not really sure if I want to add additional meats, since there will already be pork, chicken, and possibly beef)?
What else would YOU want on you spud?

@AshaP: You could nix the turkey. I personally wouldn’t like that over my baked potato and I doubt anyone would miss it.
As for things to add, DEFINITELY crumbeled bacon. I think everything else that you have sounds good but if I think of anything additional, I’ll update. 🙂

If you wanted to make it a little fancier, get some cool different cheeses… like smoked gouda maybe, blue cheese, or aged cheddar.

@AshaP: I experienced my first potato bar in May and let me tell you…it was awesome haha. They had everything you have mentioned and they actually did shredded chicken and that was delicious! Everyone seemed to love that. They also had shredded cheese and nacho cheese. Both big hits. I agree with @UpstateCait: about the bacon, I don’t eat bacon but everyone else seemed to go gaga over it. I think they also had different vegetables and greens, butter, salt, pepper and garlic.

If you’re only doing one type of cheese, make it shredded cheddar. Nacho cheese is good, but shredded cheddar is more of a crowd pleaser.
chopped green onions are my favorite baked potato topping! Oh, and you don’t have butter on your list – definitely a big bowl of whipped butter.
Sometimes at work we have b.potato bars – they usually will put sliced jalapenos on it (the pickled kind) – I never use them but I figure some people must. Plus, they’re cheap! Chili is also popular.

BACON is a must
sour cream, variety of shredded cheeses plus cheese sauce, chives, salsa, broccoli
diced red onion, diced peppers, chopped jalepenos, sweet corn

For sure have traditional favourites (cheese, sour cream, butter, bacon, green onion, etc) but also have fancier options like different cheeses if you can. I love feta on a baked potato 😉

@sara_tiara: guac sounds like an AWESOME idea. Especially since I know I have some veggie-only people coming (I’m ordering a platter of shrimp deli wraps for them, but I wanted them to have something else too)
@StL.Ashley: I LOVE spciy things- I don’t know why I didn’t think of jalapeno peppers. I think your idea of different cheeses is awesome. I’m going to see what varieties they have (I know they have a “rule” about not serving any food they don’t bring- but I’m thinking the spuds bar should be semi-self serve any way, and once the “specialty’ items are out, they’ll just be out.)
@miss. eire: Yup, one of my friends mentioned how much they liked bbq over a baked potato, and it seemed easy enough to do, so I thought we’d try it. I’m hoping I’ll find some posts/pictures before October from other people that have done one, so I can show the caterer exactly what I want (otherwise, I’ll resort to clip art and microsoft paint lol)

One of my friends just went to a wedding that had a macaroni and mashed potato bar – she posted pics on FB of the toppings table! A lot of these could transfer over to a baked potato bar too.
chunks of ham, bacon, hot peppers, shredded cheddar, chili, baked beans, green onions, chopped tomatoes, salsa, sour cream, parmesan and mozzarella cheese cubes, shredded carrots, gravy, butter, onions, chives, garlic covered brocooli

Beans! Got to love a baked potato with baked beans and lots of cheese!
Also, another of my favourite fillings is prawn or tuna mayonnaise. Yum yum yum

and 100% bacon.
mozarella – doesnt taste of all that much. i’d go for a cheese with a bit more flavour – cheddar, gouda or whatever. but nothing uberstrong like blue cheese
