Okay so I finally got a real job :))! That means I have to figure out what to take for lunch. I will have access to a fridge and a microwave. I eat pretty low calorie and vegetarian, but all ideas are welcome. I can pretty much adapt anything. I just made this quinoa dish this week that would be good to take. And there’s always salad but I get sick of it. Any ideas?? I’m hoping to build up 5 or 6 recipes to rotate through.

Here’s the quinoa recipe I used. I would just make the stuffing and take that to work. I might put diced zuccini in it because it’s sooooo good!

I don’t know if you do fish or not, but you could try like a tuna wrap. Vegetarian chili or something along those lines would be good for the colder months.

Honestly, my lunch differs all the time. From leftovers (my favorite), to frozen dinners (which I’ve been trying to cut down. Hello sodium and preservatives) to simple sandwiches and salads…

I make double dinner and then take leftovers to lunch 🙂

My husband really likes taking wraps for lunch. He has meat in his, but you could do grilled veggies and that would be tasty. I work from home so i don’t pack lunches really but I’m trying to think of what you could take. Chese/crackers/veggies. hummus and pita and veggies. Any sort of pasta dish you could reheat. Really I think leftovers are the best option because it is so easy to just cook an extra portion and store for day2, plus it would be different all the time

Leftovers mostly… But I switch it up a lot and do fajitas, pasta, cheeseburger, any casserole. I just always make enough for the next day!

How do you keep the sandwiches from getting soggy by lunchtime? Do you have to leave the mayo off? I make a mean vegetarian turkey club sandwich but I’m afraid the bread will get squishy.
That’s true I forgot about leftovers. How could you eat PBJ every single day?? Lol PB&J is only for emergencies!!

I usually take Smart Ones. They fill me up, and I like having a warm meal in the middle of the day, ESP cuz my office always feels cold. Either I take that or make double dinner and take leftovers

Right now I am having a salad with radishes, carrots, tomatoes, lettuce, some cheese, and avocado. I will then eat some hummus and crackers, eat a yogurt, and have a hard-boiled egg.

My usual lazy lunch is a frozen meal. Like CherryWaves, I’m trying to cut those out of my lunches completely because of the ridiculous sodium content.
Sometimes I’ll take a sandwich. Other times, leftovers. Today I’m having leftover tacos. I also usually bring a yogurt or a piece of fruit.
I’m not very creative when it comes to my lunches (plus I’m a super-picky eater!)

Left overs, or a hamburger and bring the fixins, sandwiches, salads, frozen pizza… along with a banana and a granola bar.

Usually I take leftovers or salad, but this weekend I got a jar of Nutella from my stepdad so I’ve been having Nutella sandwiches! Mmm mmm.. makes me feel like a kid again 🙂

I make lots of different things for lunch. They are usually wraps, soups, or puffs (putting different things into croissants wrapped up). I have a reciepe service I use that rotates through different things every month so I don’t get bored since I don’t have time to look up random receipes to try constantly.
