I also baked chicken breasts with a little bit of olive oil, pepper, and oregano, topped with tomato paste, a bit of shredded parmesan, and a side of cottage cheese!

Breakfasts will be whole grain English muffins with an over-medium egg and a sprinkle of low fat cheddar cheese.

Snacks — vanilla greek yogurt with half banana and PB, cut up raw veggies

Here is our meal plan for the week…

Sunday 2/15: Chicken parisienne (slow cooker receipe found on Pinterest – http://www.laaloosh.com/2009/02/03/weight-watchers-crock-pot-recipe-chicken-parisienne/) and for desert it’s “riz au lait” with coconut milk and mangoes (http://www.ricardocuisine.com/recettes/6607-riz-au-lait-de-coco-et-a-la-mangue)

Monday 2/16: Meat macaroni with tomatoe sauce and cheese (an old favourite for cold Canadian winters!)

Tuesday 2/17: Fresh trout (oven baked) with fresh veggies (string beans & carrots) and white chocolate pie for desert (http://www.cookingchanneltv.com/recipes/laura-calder/chocolate-tart.html)

Wednesday 2/18: Salad topped with garlic shrimps

Thursday 2/19: Lecho (Tomatoes, onions, peppers, mushroom and sausages) on top of jasmine rice (FI’s specialty, and it’s always delicious!)

Friday 2/20: Homemade gnocchi with prosciutto, fresh peas and sage

 

Question of the week – Fiance and I are off for most of the week. Just looking forward to quality time together at home.

Friday 2/20: Leftovers

Saturday 2/21: I normally don’t cook on Saturdays.  If anything, I’ll probably do a pot of white bean chicken chili.  What’s most likely though is we’ll eat whatever’s in the freezer (frozen pizza or chicken nuggets, fries, or whatever), and then I’ll make the chili on Sunday.  It’s still a toss up this early in the week though.

Question of the Week: What are you looking forward to this week? Friday at 5pm.

 ETA: I’m making bread pudding w/ rum sauce for dessert tonight, and I’m pretty stoked about that!

Sunday 2/15: Apple Juice & Dijon Braised Cheddar Chicken Broccoli Rice Skillet (say that 5 times fast) 

Monday 2/16: Chili and cornbread since it’s due to snow! 

Tuesday 2/17: Tacos, Spanish rice and beans

Wednesday 2/18: Leftover chili and cornbread

Thursday 2/19: Tortellini with sausage and garlic bread

Friday 2/20: I haven’t gotten this far yet…probably chili again

Saturday 2/21: Not sure!

I’m most excited for maybe having snow!

Sunday – lentil and rice stuffed acorn squash

Monday – Chicken and cauliflower Makloubeh! http://www.food.com/recipe/makloubeh-cauliflower-375542 (We actually don’t use this recipe at all, just thought I’d include it to give reference.)

Tuesday – White bean and kale soup

Wednesday – Spicy coconut crusted chicken, roasted sweet potatoes

Thursday – Black bean tostadas

Friday – It’s our going away party at our favorite belgian beer bar — mussels and frites! YAY!

 

QOTW: I am most excited about the frites, they’re seriously unreal.

We are planning to officially start TTC again.

I havent gotten the knack yet of planning a weeks menu ahead of time but I’m close to starting. I did  plan tomorrow nights dinner and bought the ingredients today at Whole Foods Market to make Chicken Cacciatore. (Tonight I’m lazy, having veggie burger with baby carrots, red bell pepper strips, green stuffed olives and kosher dill pickle on the side, with homemade Valentines maraschino cherry cupcake for dessert 🙂 )

 

Everybodys menus sound so delicious! 

 

On Friday February 20, I’m looking forward to my much needed night out with male and female friends!!

Thursday 2/19: Butternut squash, blue cheese, and spinach orzo

Friday 2/20: Been craving this lemon pasta with some shrimp, might need to happen

Question of the Week: What are you looking forward to this week? Turning in my renewal application at work. It seems like every single deadline of the year has been in Jan and Feb, and this is my last biggie. After that, just back to the regular, garden-variety insane schedule 😉
