Sunday – leftovers/smoothies
Monday – loaded potato “pasta” (potatoes peeled into noodles and then loaded with baked potato toppings).
Tuesday – spaghetti squash with smoked sausage and asparagus
Wednesday – taco soup
Thursday -Saturday: on vacation!!
Lunches this week are sliced veggies with hummus, and then either sliced turkey or turkey apple burgers.
QOTW – we’re going on a vacation weekend (just DH and I!) to NiagaraFalls!

Friday 2/20: lemon garlic mussels over pasta
Saturday 2/21: guiltless chocolate chip pancakes (recipe from Skinnytaste cookbook)
Question of the Week: What are you looking forward to this week? I’m going to Disney World this weekend, so that’s a plus ๐
This week I’m looking forward to just my day to day life! I’m doing the Whole 30 challenge so that’s on my mind. I’m also booking all of our honeymoon plans this week and sending out invitations! Woo!
I got a CRAZY deal on pork so our meals are really pork heavy this week!
Sunday 2/15: Pork Chops with Pan Seared Brussels Sprouts, Red Peppers and Roasted Tomatoes
Monday 2/16: Pork Chops with Mushroom Gravy and Loads of Broccoli
Tuesday 2/17: Mashed Sweet Potato Loaded with Shredded Pork and a Side of Kale Chips and Cabbage & Carrot Slaw
Wednesday 2/18: Roasted Chicken with Cabbage & Carrot Slaw and Green Bean Salad
Thursday 2/19: Parsnip Puree, Shredded Chicken and Slaw
Friday 2/20: Meatballs & Sweet Potato Pasta with Porcini Mushrooms and Oven Roasted Tomatoes and Garlic
Saturday 2/21: Beef Stirfry with Carrots, Daikon Radish, Cashews, and Broccoli Served On Ginger Cabbage
Sunday 2/15: Leftovers from V-Day! We had crab legs (none of those left) and home-made sushi. So….sushi
Monday 2/16: Nothing as DH is out of town until late. Probably will find myself something around the house

I’m still impressed with everyone who cooks everynight! What do you do with the leftovers? Every recipe I have has leftovers (for days it seems). Of course, I do take opportunities to double recipes frequently. So I can be lazy and not cook every night.
Sunday: beef roast with bakedpotatoes, and steamed veggies
Monday: home made burritos, and spanish rice and sweet corn
Tuesday: home made deep dish pizza
Wednesday: chili and corn bread
Thursday: (my night off so i can get fancier ๐ )….Steaks with green bean casserole, and baked zuchinni….and brownies (horrible pms and brownies sound freaking awesome!
Friday: Spaghetti with garlic bread
Saturday: It will be warmer out so Im hoping DH will smoke a pork loin on the trager
