@starrdust:  Yum!  I don’t have pictures, because my dinner has already been devoured. but I made crock-pot orange chicken with broccoli, brown rice, and baked crab rangoon Smile Delish!

Tomorrow I’m doing grilled garlic-herb shrimp and a summer salad with avocado, red pepper, black beans, and corn.

I LOVE adobo. Looks awesome. I am going out of town for the weekend tomorrow so I’m not cooking anything (and have no pictures), but I just made my menu for next week!


Monday: Hangar Steak with Mustard Red Wine Sauce + Mushrooms + French Beans

Tuesday: Baked Crispy Catfish w/Remoulade + Spiced Black Beans

Wednesday: Buttermilk Roast Chicken + Sweet Potatoes

Thursday: Marinated Portobello Mushroom Burgers + Shallots + Grilled Corn

Friday: Pollo Bianco + Peas

Saturday: Creamy Herbed Chicken Skillet + Broccoli

@starrdust:  Yea! I always make a weekly menu and am constantly looking for suggestions and new things to try – cooking inspiration threads are the best.

Some successful meals this week were pizza burgers (yum!), roast salmon steaks with an avocado remoulade, meatball stuffed mushroom caps, potato and ham au gratin, and tonight is a chicken orzo casserole

Our current menu is:

Monday: Marinated italian chicken with parmesan risotto and peas (done and yum)

Tuesday: Pasta with sausage, tomatoes and cream; italian bread; cesear salad(done and double yum)

Wednesday: Bacon cheeseburgers with sweet potato “fries” and a sriracha dipping sauce (done and yum, though we apparently cured the bacon for a bit too long before smoking the most recent batch. oops)

Thursday: Spicy garlic lime chicken with rice pilaf and steamed broccoli (done and double yum)

Friday: Pork loin wrapped in sage and proscuitto with a mustard pan sauce, mashed cauliflower, steamed greenbeans (can’t wait! I love this pork)

Saturday: smoked chicken, smoked navy beans, and corn on the cob (first time smoking a chicken, so we’ll see how it goes)

Sunday: Dinner out to celebrate my mom’s upcoming birthday (at a chain restaurant. I’d rather repeatedly stab myself with a fork)

Monday: Cheesy chicken enchiladas with taco rice and black beans (because it’s Mr. Lk’s first day at his new job, and nothing says “comfort” like lots of cheese!)

Tuesday: Greek-style pork chops, olive oil coucous, and a veggie TBD (tasty and lazy)

@starrdust:  Your menu sounds divine, too. I am currently having a love affair with mussels. They are little shells of mouth watering joy! I should cook more with crab meat, seeing as I am a Marylander. But the truth of the matter is… I hate picking through the meat to get out all of the little shell pieces. I’m just too lazy to do it. haha And now you have me wanting crabcakes! The good news is that Sunday’s chain restaurant is close to my favorite seafood shop for crabcakes. Win!

chicken ranch tacos are going in the crockpot in like, 5 minutes.

2 chicken breasts, a cup of chicken broth, half a packet of taco seasoning, and a packet of ranch dressing mix. cook on low for 6-8 hours, shred, and make into tacos.

after that, i have no clue. i haven’t made a grocery list yet.
