@ejs- Sometimes I only feel like a hill giant. :p I bought a 6′ tall canvas the other day, and I could easily see over the top while flat footed. I felt like a monstaaaaar. 🙂

P.S. Can I come eat food with you tonight? kthx. It sounds delicious. :p I ran for an hour today, and all I’ve had a chance to eat was a PB&J with reduced fat crunch Peter Pan pb and sugar free (ew) jelly and that 35 calorie bread. Ech.

Key word “star” =]

Yes come over, I love entertaining =]. It seems silly to cook for myself, so this is leftover week from a birthday dinner I threw monday night. I just keep eating the same thing for lunch and dinner, lol. Good thing I like it enough to not let good meat go to waste!

OH gosh, i hate pb&j’s. hate ’em.

Entertaining is SO fun. I can’t wait to be out of school so we can be all grown-up and have a supper club. (Nerd, I know). As it is now, I really only have time to cook fun stuff on weekends, but that’s good I guess. Otherwise, I’d probably weigh 02394 lbs. :p

PB&Js for me are one of those things where I’ll get some random craving for it occasionally. Today it was just a go-to because peanut butter is a good energy food for me. And it was easy. lol.

We had the most delicious dinner tonight–and took under 10 minutes to prepare! I mixed pepper, olive oil, and garlic into some ricotta cheese. Then I smeared it on a baguette, put some basil leaves and a slice of prosciuotto on top, and threw some mixed greens in a bowl to go with it. SO YUMMY!

@50, do you like almond butter at all? i flippin’ love it. But hate peanut butter for some reason. Had too much as a child me thinks

@Bellini, Ooo caprese salad! My only problem is that i munch on too much cheese. mozzarella cheese gets in my belly much too easily. I really love pesto; it is my downfall. tomatoes and pesto and cheese mmmm. If i could put it on everything (um, i sub it for mayo on a turkey sandwich) i would! The smell of it’s insanely good. Sam’s Club makes a huge jar of it and it has pine nuts in it. Very neat

Sushi sounds INCREDIBLE, eloping.

My Fiance worked late so I ended up having a Lean Cuisine lasagna and a nectarine. Wow. Boring, huh? 🙂

@ejs4y8- omg i know, mozzarella…esp drizzled with olive oil…my engagement party is this weekend and i was planning on making caprese to take to the house where it’s being thrown, but i accidentally ate some of the mozzarella i bought for it (whoops!).  pesto is the best! i have to check out sam’s club!

Yeah, Sam’s Club if you’re making for a group. You can get a big 8oz tub of pesto (and we all know pesto is spensive) for about $7 and TWO of those long logs of buffalo mozzarella for $7.99….when I was at Trader Joe’s the other day, just the small mozzarella ball was that price, so you get like, 4x the cheese for that price. It’s much much more affordable.

Thanks @50 I’m private about it, but my FH says I should be on support boards and stuff, I just don’t like sounding like I’m whining 🙂

@ejs478 I adore pesto as well but it’s so bad for me, so I came up with pesto oil.

Just take a pinenut oil or sunflower oil and puree it with basil and sea salt —  put it all back in the bottle and keep it in the fridge! I love using it for cooking, salads, everything.  I use it on whole grain pasta and pan seared chicken pretty much daily.
