Ok you all have some delish sounding meals! Fiance works 3rd shift this week so when I get home I will have little time with him…so we are likely going to have a bag meal!! 🙁
Tomorrow though, we go for our second tasting….so maybe I shouldnt eat until then so I can chow?!?!?! haha!

I don’t really have a set recipe, but I’ll tell you what I do for 4 servings-
I saute one sliced onion and chopped garlic and fresh ginger with garam masala, tumeric, cumin and a dash of chili powder in some veggie oil- when it is all coated and starts sticking to the pot, add chopped zucchini, yams, and cauliflower- coat them with the spice mix in the pot.
Then add one can of crushed tomatoes and some water- dump in more cumin, tumeric, garam masala and salt- mix and let simmer until everything is cooked and tastes good.
Make basmati rice according to instructions, and add some saffron threads to the rice while coming to a boil

Whole wheat spaghetti and homemade pasta sauce that DH and I made a huge pot of this winter and froze in individual portions. Yummy on a (still) cold spring day 🙂

I’m trying to decide whether I should end my night with a beer or a greek yogurt.
I already had one greek yogurt today, so I’m leaning towards a beer (even though I only have gross cans of bud light).
Wish I’d been able to get wine tonight, but had to pick up some cat food instead.

I had a little noodle experiment tonight!
Wanted to bring a little more noodle variety into our life besides pasta, egg and rice noodles. So I got buckwheat noodles the other day. Had some leftover homemade pork wontons in the freezer.
Homemade pork wontons w/smoked tofu, enoki mushrooms, choy sum over buckwheat noodles in homemade broth.
And yes I’m totally one of those annoying people that take pictures of food. 🙂
And with plenty where we are having that for lunch as well.

@KatNYC2011: I wish we lived closer, especially now that we are both lonely! 🙂 I am drinking a fantastic bottle of Concord from a local vineyard.
I made a quick dinner – I had some grilled chicken in the fridge, so I sliced it and mixed it with penne, olive oil, garlic, and a little butter. At the last minute I threw in some canned artichokes and parmesan cheese. Easy, quick, and I have enough for lunch tomorrow.
