I have boneless chicken breasts marinating in a citrus marinade. I am mixing up a green salad with raisins, sunflower seeds, cashews, crispy noodles and citrus lemon/lime dressing, I will top it with the chicken and feta cheese, I am also gonna make a nice crusty french loaf!

- Wedding: June 2010 - New York Botanical Garden
We are on a massive clean out the fridge/freezer/pantry this week while we prepare for Passover so meals have been the craziest mish moshes of things we need to get rid of!
ETA: It is interesting though to see what we come up with by using things we already have and avoiding buying any new food – we made taco night and veg/tofu pad thai all from stuff we had!

Pulled buffalo chicken sandwiches. Chicken is in the crock pot right now.

Usually Tuesdays are Taco Tuesdays, but both my nieces caught the plague (I can’t even comprehend how much grossness came out of their small bodies last night) so I’m making a big pot of chicken noodle soup for tonight.

We’re also trying to use up things in our pantry and freezer since we don’t feel like going grocery shopping this week (but the next week will be a HUGE trip)
I’m probably just going to grill a chicken breast and put it on some brown rice thrown together with whatever veggies we have in the fridge… boring, but it’s food.

I’m going to make baked cashew crunchy chicken fingers, sweet potatoes and a big bad m-fin’ salad for DH and I! Sliced cantelope for dessert.
