Wow. Nights Fiance works (most of the week) I don’t cook.. jealous of everything yall are eating.
BUT my double cheese pizza is on the way and a bottle of moscato is being chilled. And my kitchen is still clean 😉

We had steelhead trout with dijon mustard and “magic salmon seasoning,” steamed broccoli, and tomato/onion/avocado/cilantro with tortilla chips. And popsicles for dessert!

We had an “appetizer dinner” I made fried green tomatoes and we had a pesto potato salad with chickpeas.

For dinner, I marinated and grilled some chicken tenderloins and we paired them with grilled asparagus and saffron rice. Yum!

We had cube steak and gravy w/ rice and collard greens. Easy and cheap…all of our meals this week have to be cheap. I’ll be stressing til Friday!

Tonight we had our last big meal before we start a weight training program.  DH marinated and grilled some filet mignon that we bought at the farmers’ market, and I heated some leftover spaghetti squash, roasted bacon-wrapped asparagus bundles, and sauteed some shallots and garlic in butter.  It was delicious!!!

Tonight I made chive waffle grilled cheese sandwiches. Inside: caramelized onion, sautéed mushrooms, arugula, tomato, Granny Smith apple slivers, and old cheddar. Peaches & grapes on the side 🙂
