What is on your meal plan for tonight/this week?
I am in serious need of ideas. I’vve been busy working on house projects and throwing parties for other people. so busy that i’ve been slacking in meal planning for my own family. Fail. So I need some inspiration for what to cook for dinner tonight. Monday was buffalo bacon cheeseburgers with ranch potatoes and corn on the cob, and yesterday was chicken picatta with pasta and roasted broccoli.

I might throw together a chicken casserole since it’s easy…
I take a pack of boneless/skinless chicken breasts & place in a lightly greased casserole dish, cover each piece of chicken with 1/2 slice of american or cheddar cheese
Mix 1 can of cream of (chicken, asparagus, celery, whatever) soup with 1/4 cup milk, pour over chicken
Pour 1 box of uncooked/unprepared stuffing (I like savory herb flavor) over chicken & soup
drizzle butter over top
bake at 350 for about 30-45 min/til chicken is cooked
I also like to add shredded cheddar on top and leave in the turned off but still warm oven for another 10 minutes to melt.
I usually serve with steamed broccoli.

- tonight is cheeseburgers (homemade), with fries and some kind of veggie.
- tomorrow will be chicken ranch tacos with rice.
- friday will be meatloaf, potatoes, and a veggie.
- saturday will be bbq chicken, rice, and salad (i think)
- and i think sunday we’ll be out, there was mention of visiting family.
i’m not in charge of the menu right now. we’re living with my parents, so my mom makes the menu. i’d gladly take over… but my father won’t eat anything i cook. i cooked last night, and it was something he’d had before. but since i made it, he picked around things. so until he gets over himself, mom makes the menu… and we eat the same things all the time.

Tomorrow: Baked chicken breasts, scalloped potatoes, broccoli
Friday: Shawarma
Saturday: A family BBQ
Sunday: Chili and cornbread

Tonight I am planning on black bean soup. My husband will be out doing his fantasy football draft so I am on my own. I made a big pot of soup this week to eat on. It’s pretty much all I want to eat right now lol

this is what i’m making tonight! i just jack up the heat a little bit and don’t let it bake for so long. 40 mins max. and i use about 1/2 cup of cheese, not a pound! it’s not the easiest recipe but we’re having friends over and HOLY leftovers. Nom nom.

@lovekiss: Monday’s meal sounds absolutely fabulous. Ranch potatoes? Oh me, oh my!
Monday I made baked chicken and green beans with roasted peppers and garlic.
Yesterday I made turkey meatballs and sesame rice.
Tonight we are visiting my parents, and my mom is making lasagna. Score!

Monday- chinese bbq flank steak with a snow pea, yellow tomato, cucumber salad with a light creamy sundried tomato dressing, corn on the cop
Tuesday- Thick cut plum glazed pork chops, pan fried plantains, cucumbers
Wednesday- a chipotle mahi mahi, herbed quinoa, roasted onion and some other veggie.
Thursday- Gazpacho with crab and some chicken wings.

@SaraP2012: I’m not a huge fan of cooking so I like to make things that aren’t very fussy. Lol. There are a ton of Bees that make really awesome sounding food, but I don’t have the patience.

Tonight is our weekly vegetarian night with neighbors, so we will make a roasted chickpeas & kale Caesar salad (no anchovy) and cheese-stuffed shells with vodka sauce.

“Lightened up” eggplant parmesan (panko breaded, and baked), spaghetti squash, and a spring mix salad with raspberries and figs. Cant wait to dig in!

@misschickpea: mmmm shepherds pie. Mr LK makes a steakhouse shepherds pie with blue cheese that is to die for. I think he should be making that soon. 🙂

@DaneLady:, I am going to do a cauliflower and buffalo chicken casserole recipe that I just found. I have extra cauliflower left over from entertaining this weekend, and we love buffalo anything, so it could be just the ticket.
@megz06: The ranch potatoes are super easy. Cut up some red potatoes into 1″ chunks, toss with some olive oil and ranch dressing mix, and roast in a glass dish at 400 until the potatoes are soft (25-30 minutes). Easy and yummy! This also works well with onion soup mix instead of ranch dressing mix.
