I’m making Jambalaya with shrimp, peppers, and onions. Not sure if the rice is much healthier than the pasta though.

I always check skinnytaste.com when I need new recipes! I’ve gotten a lot of good ones from there. 🙂

grilled marinated chicken and whole grain rice with some sort of veggies. 😀 yum

Tonight were having grilled lemon dill chicken with quinoa, mixed salad, whole wheat pita and home made yogurt sauce. Yum! Now i’m just waiting for Darling Husband to get home and fire up with grill!

I second the Skinnytaste recommendation and also http://www.eatingwell.com/ I have found SO many great recipes on both sites.

What about just a stir fry with those ingredients? I used to do those all the time, they’re super quick and tasty. 

Just sautee up the veggies and add the shrimp. I usually use a low sodium soy sauce.

We’re grilling hamburgers. My husband is going to chop up some jalapenos and onions and put them in the meat. Plus we’ll have whole wheat buns.
