I want to make something fast and healthy. I’m thinking of something with shrimp with mixed veggies. We’d usually have that with pasta, but that takes too long and we’re trying to stop eating pasta. What are y’all having? I can always use ideas for the rest of the week.

I’m making Jambalaya with shrimp, peppers, and onions. Not sure if the rice is much healthier than the pasta though.

Tonight were having grilled lemon dill chicken with quinoa, mixed salad, whole wheat pita and home made yogurt sauce. Yum! Now i’m just waiting for Darling Husband to get home and fire up with grill!

What about just a stir fry with those ingredients? I used to do those all the time, they’re super quick and tasty.
Just sautee up the veggies and add the shrimp. I usually use a low sodium soy sauce.

We’re grilling hamburgers. My husband is going to chop up some jalapenos and onions and put them in the meat. Plus we’ll have whole wheat buns.
