Sauteed tilapia fillets with carmelized onions, endive salad and lemon garlic rice…that’s what we’re eating at our place anyway…

I’m making breaded garlic chicken breasts, roasted sweet potatoes with cilantro and sweet chili sauce, and roasted broccoli. My Monday night dinners are never very exciting!

We are having broccoli rabe, meatballs and sausage and fresh mozzarella. Mondays are our lazy nights, so I hit the pork store last night and loaded up.

Home-made tofu and vegetable curry (made with freshly ground spices and largely organic vegetables) and brown basmati rice.

We’re following it up with some home-made Italian-style ice cream (tastes like a creme brulee flavour, really rich).

We’re trying to eat up a lot of vegetables from the fridge at the moment, so on a largely vegetarian diet ’til Friday.

Something from Nutrisystem. I’m just glad my latest shipment arrived before I went away for the weekend (and ate “real” food while I was away), so that I have a variety of Nutrisystem frozen entrees from which to select.

@Nona99:  Oh my gosh! Your menus sound amazing!! Smile

I had a salad, carribean chili, all veggies and beans, no meat. And a fruit salad.

Fi had the salad, bacon sandwhich on toast, (FI dosn’t like beans) and the fruit salad. (I added pineapple to his fruit as I am allergic)
