Taco Chili in the crockpot!

I didn’t put beans in it, since both DH and I aren’t a fan of them in chili, and added extra corn and chicken. DH just texted me and said it smells pretty delicious in the house. I’ll probably cook up some whole wheat pasta to mix in and make a salad.
Steak & cheese sandwiches. Not the healthiest, but easy and darn tasty.
We had veggie curry. Roughly chop an onion in a little oil. Finely dice 4 aubergines and roughly chop a handful of mushrooms, add to the onion and stir well. Cover the pan so the veg steams for a little while and softens. Once it is soft, stir through curry paste to taste (I would make my own curry paste, but didn’t have the time today, so jarred paste is fine) and a small tin of chick peas. It was really yummy! Served with naan bread, mango chutney, pickle and mooli relish (just finely sliced raw white onion, matchsticks of raw mooli and a good amount of fresh coriander).

yesterday left overs… Roasted chicken, red potoatoes, green beans.. I made enough so I wouldnt have to cook today…LOL
I made a soup with sausage, spaghetti squash, kale, and onion. Seasoned with thyme, garlic, and red pepper flakes.
Smothered pork chops with roasted potatoes and a garden salad.

nothing truly exciting. it’s monday, i’m sick, and i don’t feel like cooking anything big and fancy.
