I just had a bunch of fresh mango.

Now I’m microwaving a tortilla crusted fish lean cuisine and am going to have a beer or two.

We are going out, probably to mexican food!

Tomorrow I’m making vegan pizza though, that’s a more exciting answer!

We had sloppy joes made by *hold your breath* MR.ND! Lol. His madre usually cooks (and uses Manwich) but I took him out shopping and we got sloppy joe mix, and he cooked for all the guests that are coming over tonight. I’ve also successfully taught him to laundry this week…he’s been busy πŸ™‚ Haha.

I made sweet potato burritos. Essentially roasted mashed sweet potatoes mixed with black beans, wilted spinach, garlic, onion, chili powder and red pepper flakes. Darling Husband is addicted to them. I made about 3 dozen today. They freeze and reheat beautifully.

fiber one bar, chips and salsa, artichoke heart salad leftovers, half of a twice baked potato. Not a real dinner. Just quick kitchen raid. πŸ™‚

I don’t know yet. I was thinking about ordering pizza because I am alone tonight and have been cleaning all day, but I am not sure.

Tonight is our going away party so I made–

-taco dip

-guacamole

-chicken kebabs

-sausages

-broccoli and cauliflower casserole

-tomato, mozzarella, and pesto salad

-rice krispies treats

-peanutbutter balls

-american flag cake

 

..needless to say, the wedding diet is on hold for tonight!

I made Mediterranean Shrimp. AKA I cooked shrimp in diced tomatoes w/ onions and garlic and pine nut cous cous. It was SUPER yummy.

a margharita pizza (only took 9 years of living here to find a good one!) and a bottle of cab. i bought stuff to make a salad, but skipping on it….it’s the thought that counts, right? πŸ˜‰ i’m writing off the guilt of eating this tonight with the fact that lent = no meat tonight. seems fair enough….
