We have leftover homemade tacos in the fridge, but I’m REALLY craving Papa John’s pizza and trying to resist the urge to dial them up right now. SO is working until 8:30, so he isn’t here to control me… haha.

@KatNYC2011: I wanted to have chicken parm tonight, but decided against it.  I may try to make it during the week though.  I usually make it with croutons on top.  It’s so good.

I ordered myself an italian hoagie and Fiance a buffalo chicken cheesesteak.

Not totally sure.

I have defrosted chicken thighs

and I am making stock to make asparagus soup.

Maybe some sort of spanish chicken like this  http://allrecipes.com/Recipe/spanish-chicken-2/detail.aspx

and the Darling Husband will eat leftover feta roasted red peppers while I eat the soup.

Baby spinach and heirloom tomato salad with a lime vinaigrette.

I made ricotta and spinach stuffed chicken breast wrapped in prosciutto, with salad, ciabatta bread and asparagus. It was pretty delicious, if I do say so myself.
