@lefeymw: You made me think of a recipe I just saw on Sunday night – from Pioneer Woman:

Recipe: Chicken Spaghetti

Ingredients

  • 2 cups Cooked Chicken
  • 3 cups Dry Spaghetti, Broken Into Two Inch Pieces
  • 2 cans Cream Of Mushroom Soup
  • 2 cups Grated Sharp Cheddar Cheese
  • 1/4 cup Finely Diced Green Pepper
  • 1/4 cup Finely Diced Onion
  • 1 jar (4 Ounce) Diced Pimentos, Drained
  • 2 cups Reserved Chicken Broth From Pot
  • 1 teaspoon Lawry’s Seasoned Salt
  • 1/8 teaspoon (to 1/4 Teaspoon) Cayenne Pepper
  •  Salt And Pepper, to taste
  • 1 cup Additional Grated Sharp Cheddar Cheese

Preparation Instructions

Cook 1 cut up fryer and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.

Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).

Happpy hour with a girl I used to babysit… she’s getting married, so I wanted to take her out for drinks!  Poor DH is on his own… ๐Ÿ™‚  I bet he’ll be having his own happy hour food. ๐Ÿ™‚

@SpecialSundae: My mum makes something similar. I always just call it Shepherd’s Pie but I’m vegetarian so I don’t know any different! It is really chilli with mash on top and cooked in the oven. Think I’ll make it next week for my man when I am back at his place. I LOVE mash with anything, it’s like baby food! Mash and soup are both amazing.

Another recipe I saw recently is bangers (veggie for me) and mash with apple and fennel. I picked up the recipe card at Sainsbury’s. Looks tasty and I’ll be making it next week!

Sweet and sour eggplant with chickpeas over rice. Can’t wait to get home in 4 hours to eat because I’ve been starving all day!!!  I cannot stay full today!

I have some cheese tortillini. I am going to cut up a chicken breast, some garlic, onion, and bell pepper and and cook that up with some olive oil and a big dollop of jarred pesto, and toss the tortillini in it, sprinkle a little parm on top, and serve it with a salad. It is a 15 minute easy-peasy meal and just like that my guy thinks I’m a gourmet chef.

@Gerbera:We always make them from scratch! It’s super easy…we just buy canned salmon, mix with 1 egg, breadcrumbs, chopped onion and any seasons. Cook and voila, delicious ๐Ÿ™‚
