What are you all cooking tonight, the first Sunday dinner of 2011, before back to work as normal?
We’re having Weight Watchers’ roasted vegetable and barley pilaf; roasted tomatoes and garlic with cannalini beans, parsley and lemon; soy sausage (more FH than me!)

I am making chicken enchiladas. It’s in the slowcooker now.

I’ve used some of the leftovers in the fridge from NYE and New Years Day. My fridge is full.

It’s our five year anniversary and our last dating anniversary so we’re going out for steaks at Longhorn’s before a movie (we both took tomorrow off since we couldn’t take off the past few weeks).

Great question! I’m munching right now because I’m already hungry and Darling Husband will be at work until at least 10pm. I have no idea what to do for dinner, especially since our fridge is pretty bare (we’ve had 2 meals since getting back from vacation and the leftovers are gone now, there’s not a lot of groceries in the fridge). I can’t wait to hear what others are doing!

We just finished eating roasted pork tenderloin with garlic & peppercorns, mashed potatoes, and broccoli. IT WAS SO GOOD!

yummm. we had a family dinner at moms. baked chicken, baked mac n cheese, baby carrots, corn, mashed potatoes stuffing and biscuts…. lol ummm and i have to fit into a dress WHEN??

Grilled cheese sandwiches. I think we are still in recovery mode and enjoying being lazy!

heh I made a meal with mashed potatoes yesterday, but I use some celery root to bulk it up without as much starch and the flavor is awesome.
One of FH’s favorite things is mashed potatoes (potatoes and cheese in any form are his favorites).
Veggie tacos (with soy crumbles) are one of my week-day staples. I always have the items on hand.

Leftovers. We have so much of this soup left…it was really good but I’m sick of it now. 🙁

Spaghetti bolognese! It’s simmering on the stove now. I’m pretty excited because we usually have traditional spaghetti sauce with Italian sausage so this will be something different!
