So far I have:

– Roasted chicken and potatos

– Steamed salmon with leeks and carrots

– Tomato and zucchini farci 

– Couscous

Today I’m making Buffalo Chicken Lettuce wraps:  http://www.skinnytaste.com/2012/04/crock-pot-buffalo-chicken-lettuce-wraps.html   with corn on the cob, and maybe some tater tots.

Since there are only two of us, I’m going to use the leftover chicken tomorrow night to have Buffalo Chicken salads.

Tuesday will be eat-out night because I work until 7 and Darling Husband usually picks up my daughter and they eat before I get home.

Wednesday we’re having grilled shrimp, rice & veggies

Thursday will be omlets or some other breakfast meal because I accidentally bought another dozen eggs thinking we were out, and ended up with over 2 dozen in the fridge that expire in another week. 

Friday we usually eat out because my daughter goes to her dad’s & we get a date night!

ETA:   I’m actually pretty proud of myself for having the whole week planned already.   I usually have about 2 meals planned in advance & then flounder the rest of the week.

Tonight I’m making sausage with peppers and sauce on bakery “hot dog” buns… Have to figure out what on the side:)


Tomorrow maybe tomatoe soup and dumplings….


I was ambitious this weekend and made some great meals… chicken in a wine/cream sauce with mushrooms, peppers, and mashed potatoes… I made applesauce banana bread from scratch for dessert…


Saturday I did crock pot pork roast with apricot preserves, fresh mangoes, spicey mustard… it was amazing.. with mashed potatoes and fresh asparagus.

Yesterday we went out to dinner with my brother in law…

Last night I made gluten free chicken and dumplings.

Tonight we are headed to a hockey game so will eat on the road.

Not sure on the rest! Love your ideas, especially the chilli lime shrimp.  Sounds delicious!

Ok, we’ll have:

– oven-baked chicken breast and potatoes
– beef barley stew
– fish tacos
– pork gyros with tzatziki (you inspired me!) and salad
– pasta of some sort

I went shopping yesterday… Darling Husband is on afternoons so I figured I’d buy some simple things to make that would provide leftovers…. and I found something I’d forgotten about. I lived at my mom’s before moving in with Darling Husband and she, nor my sister liked chicken legs. I found a pack of 8 big juicey ones for under $3!!!  I’m going to pull the skin off and BBQ some tonight with sweet potato fries. Not the most healthy meal but not awful and WOW for a budget. This is enough for at LEAST 3  meals (i am good with one.. Darling Husband would probably want 2.)


I also love (but didn’t get any this time) boneless skinless chicken thighs. I spray a pan and plop them in. The natural oils/grease keep them very moist. I put some salt and pepper or other seasonings on them and they’re SO GOOD. If you haven’t tried them, DO.

I’m trying to bulk-cook and freeze portins as much as I can over the next couple of weeks as Tourism season is starting and I want to be prepared.

Yesterday: Moussaka

Today: Livers with spring onions, dill and rice (Much nicer than what it sounds!)

Tomorrow: Chicken Kokkinisto with pasta

Thursday: Fish on the barbeque

Friday: Lentil Soup

Saturday: Octopus Stifado

Sunday: Stuffed Vegetables

I also re-started making my own bread.  Now the weather is hot I can leave it to rise outside and really not that much work. Also I’ve got a tray of spinach pie for lunch times as well as a cheese and olive scone cake.

i wish i was responsible enough to make a weekly dinner plan LOL


last night we bbq’d some chicken and steaks.. we had that with a ceaser salad.

Tonight we might go pick something up because we have a concert

tomorrow we might eat the chicken and steak leftovers

Tonight I’m making sloppy joe

Tomorrow I will use the left over ground beef for cornbread taco casserole.

Thursday Im going to george foreman some chicken breast and put it over pasta

Friday we order Pizza.

Saturday I think im frying catfish

Sunday im going to crouck pot a roast…

Monday  – Mushroom burgers

Tuesday  – Hippie Loaf (a sort of “meat” loaf)

Wednesday – Red-Red Stew

Thursday – “Crab” cakes (made with tofu)

Friday – Spinach-scallion pancakes

Saturday and Sunday – leftovers from the week.

I made tacos Sunday and there were plenty left over for yesterday

Tonight I am making chicken tenders breaded in that new Kraft kit stuff.. Kraft Fresh Take. I got Chili Lime & Panko.  With a side of mashed potatoes and peas.


Tomorrow I am going to make beef stew and dumplings.

Friday is DH’s bday so I’m taking him out!!!

This weekend spending at mom’s for Mother’s Day… going to probably grill out:)
