I’m a cheese fanatic.  I enjoy:

  • Cheddar
  • Pepper jack
  • Provolone
  • Mozzarella
  • Asiago
  • Swiss
  • Havarti
  • Horseradish

 

…mm, so good.  There’s definitely more, but I think you guys get the idea. 😛

For snacking, sharp or extra sharp cheddar. 

For meals, pecorino romano, parmesan, or mozzarella.  I also like feta and goat cheese.

The only cheeses I am really not a fan of are blue cheeses.

My favorites:

• Saint Andre triple crème cheese
• Extra Sharp Cheddar
• Pepper Jack cheese
I also really dig a good parmesan with honey.

@.twist.: I’m allergic to dairy too…but I make the exception and eat it on special occasions.

Oh gosh, I LOVE cheese. Especially sharp yellow cheddar, creamy white cheddar, gouda,  brie on crackers… the list goes on and on

@napabridekelsey:@missmouse29: Also, try grilled cheese with goat cheese, caramelized onions, sauteed portobellos (chopped), and fresh basil on whole grain bread. To die for.

For the bruschetta it goes something like this: Mix together 3 tablespoons of port wine, 1tbsp balsamic vinegar, 1 tsp dried oregano,  1 tsp dried basil, 2 minced shallots, and some salt and pepper. It shoud be pretty chunky. Cut some roma tomatoes in half lengthways, and coat with oil and minced garlic. Place them cut side up on a baking tray covered in tin foil (believe me about the tin foil!!!). Put some of your port/spice/shallot mixture on top of each tomato and bake for about 30-35 minutes at 450*.  Slice up a baguette and toast those. Smother in goat cheese and place a roasted tomato on each. Make more than you think you’ll eat because they’re AMAZING.

Some of my faves from there:

Fleur Verte – goat cheese with green herbs and pink peppercorns on the outside (French)

Crandale – Ilster Wensleydale with Cranberries (English)

Block Feta – (Greek)

I haven’t really ever had a cheese I don’t like, but I LOVE Camembert.  It’s hard to find good, fresh Camembert here, but when you do, heaven.

@napabridekelsey: It seems currently to only be soft cheeses! But it totally sucks, especially because I’m a dairy fiend!! I feel bad for you! I don’t know what I’d do without dairy.
