I make a really good cranberry sauce that i modified from allrecipes.  I do 1 cup of tangerine juice (you can save peel for garnish) with 1/4 tsp zest OR 1 cup OJ with pulp, with half cup each of brown sugar and white sugar.  Cook on stove on medium until sugar is dissolved in a saucepan.  Once it has dissolved, I add the cranberries (ocean spray 12 oz bag…rinse and remove stems first)..  They should all pop in 10 minutes and then I cook on med/low stirring occasionally (you don’t want this to boil over) for another 20.  The sauce is thick, has some berry chunks but it can easily be mashed at this point if you prefer it.  I add a dash of cinnamon to mine, and more than a dash if I’m serving it as a warm sauce for pork.  Otherwise cool for a couple of hours and it is good to go.

black bean and corn guacamole

Depending on time/how big of a batch it includes all/some of the following ingrediants

Avocados

Black beans (canned – rinsed)

White sweet corn (canned)

Guacamole seasoning (You can make your own or use store bought)

Lime juice (fresh squeezed is best, but the plastic lime works too)

Jicama (also makes great “chips” for dipping!)

Poblano peppers

Tomatoes

 

Mix the avocados, seasoning, lime juice, peppers first. Then add toms. Lastly add the black beans and corn. Everything should be cool/room temp when you mix it. Store in the fridge and serve the same day or the guac gets brown.

 

Everytime I make it people ask for the recipe and it never lasts long.

Day Before Mashed Potatoes from All Recipes.  It takes a good bit of work but you can make them the day before and then add a bit of Half and Half or Milk and re-fluff before serving on Thanksgiving.

Maple Cranberry Sauce Recipe

Ingredients:

 

12 ounces fresh cranberries (1 bag), well washed
1 cup maple syrup
1 cup cranberry-raspberry juice
Grated zest of 1 orange
1 cup walnut halves

 

1. Combine cranberries, maple syrup, juice and orange zest in a heavy saucepan. Bring to a boil, lower heat to medium and cook for about 10 minutes, or until cranberries pop open.
2. Carefully skim off any foam that forms on the surface. Stir in the walnuts. Cool. Refrigerate until use. This recipe may be doubled.
Serves 10-12

Sweet Potato and Apple Casserole

Ingredients

  • 3 sweet potatoes, peeled and quartered

  • 1/2 cut firmly packed brown sugar

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 2 large cooking apples – peeled, cored and cut into 1/4 inch rings

  •  

  • 1/4 cup all-purpose flour

  • 1/4 cup firmly packed brown sugar

  • 1/4 cup butter

  • 1/4 cup chopped pecans

Directions

    1. Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.

      1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7×11 inch baking dish.

        1. In a small bowl, mix brown sugar, cinnamon and nutmeg.

          1. Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.

            1. In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.

              1. Bake in the preheated oven 30 minutes, or until lightly browned.

              I also like to make mash potatoes with the red potatoes and leave the peel on with buttermilk.  yum, I don’t have the exact repiepie but it’s easy, – butter and buttermilk and seasoning to taste.

              I make a potato dish similar to @Phamnomenon: — we call it hashbrown casserole and use cream of mushroom instead of chicken, and add in garlic powder.  We just top it with more cheese, though I have had it with the cornflake/butter or ritz cracker/butter topping and it is so yummy!
